  • Whisk Ingredients: In a bowl, whisk together egg, mozzarella, garlic powder, onion powder, and Italian seasoning until fully combined.
  • Cook Chaffles: Pour mixture into a preheated mini waffle maker. Cook until golden brown (about 3–5 minutes). This yields 2 chaffles.
  • Prepare Toppings: Place chaffles on a cookie sheet and spread each with low-carb pizza sauce.
  • Add Cheese & Toppings: Sprinkle with more mozzarella, oregano, and crushed red pepper. Add pepperoni if using.
  • Bake: Preheat oven to 400°F (200°C) and bake chaffles for 5–10 minutes until cheese is bubbly and slightly golden.

Notes

Storage: Store in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months.
Reheating: Use a toaster or oven to maintain crisp texture.
